Gluten-Free Labeling Laws and Getting your Restaurant Cetified Gluten-Free

As of August 2013 the FDA has mandated what can be labeled gluten-free and what cannot. Companies who list a product as being gluten-free must comply with the FDA ruling by August 2014 or they can be sited as misbranding their product.

 

What impact could this mean to manufacturers and restaurants?  What about certifying your gluten-free options on your menus, what is involved, what are the certifying agencies, and what are the differences between them?  And what about manufacturers that offer free training for bringing in their gluten-free products, what are some options, how can you get help?  This program will cover the newest FDA labeling laws, will examine the different types of gluten-free restaurant certifications, and discuss some ways to get gluten-free training for your establishment.

Join Marlisa Brown Registered Dietitian author of “Gluten-Free Hassle-Free” and “Easy, Gluten-Free” with Cynthia Kupper Registered Dietitian and Executive Director of The Gluten Intolerance Group of North America, and Denise San Filippo the gluten-free food service trainer for Dr Schar,  as they provide answers to all these questions and explore the future of offering gluten-free products.

Gluten Free Cooking Demonstration  – Hosted by Advocate Children’s Hospital- Park Ridge Pediatric Celiac Center

Advocate Children’s Hospital will host a program, “Navigating the Gluten-Free Diet During College,” from 7 to 8:30 p.m. July 30 at the 10th floor Special Functions Dining Room at Advocate Lutheran General Hospital, 1775 W. Dempster St., Park Ridge.

Admission is free but registration is required.   Chef Denise SanFilippo, a gluten-free specialist, to demonstrate Gluten Free recipes.
