Denise SanFilippo is the Food Service Gluten-Free Trainer for Dr. Schar USA, Inc. Bonta d’ Italia Partner Program.  For over 30 years, Dr. Schar USA, Inc. (www.drschar.com), has been the market leader in gluten-free foods.  First launched by the parent company, Dr. Schar AG/SPA, in Italy, the Bonta d’ Italia Gluten-Free Pizza Program has grown to achieve successful partnerships with over 400 pizzerias throughout Italy.  Denise has been instrumental in helping launch this nationwide program in the USA.

As a trained chef and Celiac, Denise has spent more than 20 years in the food service industry. Her experience as a consulting chef to food service manufacturers and operators has taken her into kitchens throughout the United States.  2008- 2012 she worked for the Gluten & Allergen Free Expo and over the years became the Culinary Manager for the Chicago and Dallas locations.  She has worked with the American Celiac Disease Alliance, the 501(c)(3) non-profit organization that represents and advocates on behalf of the entire celiac community, working with the FDA to help pass the Gluten Free Labeling Law. As well as, the National Foundation for Celiac Awareness (NFCA).

Denise SanFilippo has a private Gluten Free Consulting company, where she offers Gluten-Free Training to the Food Service Industry.  She is currently finishing an instructional manual and video about “How to Serve Gluten-Free Safe in the Food Service Industry”.  Clients have included corporate training classes at Sysco Foods Headquarters, Wellness Programs for Accenture Inc., public libraries and private one on one consultation.

She is 2012 Gluten Free Foggy Awards Nominee, 2011 Catch the Spirit Award recipient and a current active member of the American Culinary Federation.  Denise has been a featured speaker at the Holistic Moms/Natural Living National Conference and Autism One/ Generation Rescue Conferences.   Her articles have been featured in Food Industry News Magazine and several gluten-free blogs.  Career highlights included having her pastries be served at a James Beard Foundation Dinner and preparing a Gluten/Dairy Free birthday cake for Chicago’s Mayor Richard M. Daley.

Denise grew up in a suburb outside of Chicago, IL, where she was awarded a full Dance Arts Scholarship to Northeastern Illinois University.    She furthered her academic studies in culinary school with a focus on Pastry Arts.  Denise resides in the Chicago Area, where she is raising her 2 teenage sons.  She actively volunteers as a judge and mentor for the Illinois Pro Start Student Invitational – Illinois Restaurant Association Culinary Competitions.
